A key component of self-care is treating your body right, but it’s not fun to eat right if the food isn’t good. I found a great healthy salad recipe via Pinterest that you’ll love and I’ve got a few tricks to make it even simpler to make and still keep it low calories.
Here’s the salad – Apple Cranberry Walnut Salad. Doesn’t it just sound yummy? I served this at Thanksgiving and even with all the other delicious sides competing with it, my family ate the whole thing.
Here are the shortcuts I used to make it even easier. (I was doing a lot of cooking that day!) I started with a container of mixed greens, a red apple (I used red gala), a green apple (I used granny smith), and ⅓ cup feta cheese (I used fat-free). Instead of adding the cranberries and walnuts separately, I bought a pack of Fresh Gourmet Glazed Walnuts and Dried Cranberries (the link is just so you can see the packaging; I’m sure you can find these much cheaper in the produce section of your grocery store). And, instead of making the dressing (which sounds wonderful), I used my family’s favorite store-bought dressing, Bolthouse Farms Classic Vinaigrette, which is also found in the produce section of your local grocery store, and is both extremely low calorie and extremely delicious. If I could I would carry it with me wherever I went.
My kids are vegetarians so we went meat-free at Thanksgiving. I made this salad again later and added some pre-cooked chicken to it so it could serve as a filling lunch for me.
Now, this amazingly delicious salad is doing double duty! It’s fueling your body, feeding your senses and saving you tons of time. It’s truly the best salad ever.
