Easy Weeknight Dinner: Trader Joe’s Argentinian Red Shrimp with Trader Joe’s Limone Alfredo Sauce

This easy weeknight dinner is ready in 15 minutes and is healthy and low in calories. The creamy, lemon-spiced alfredo sauce turns this dish into soothing comfort food too. It combines two staples from Trader Joes: their delicious and reasonably priced Argentinian Red Shrimp and their new Limone Alfredo Sauce to create an easy dish that you could totally serve to unexpected guests and that your family will love.

If you’re a regular reader of Midlife Rambler, it should be no surprise to you that I’m a huge fan of quick and easy, particularly quick and easy dinners. I work from home and I still find myself scrambling at dinnertime too often, trying to come up with something that I can whip up in a hurry.

We’re trying to eat healthier and so we’re trying to cut down on eating out. I’ve been working on coming up with a rotation of easy meals that I can turn to when I need to get dinner on the table fast and this dinner, which features staples from Trader Joe’s that I can keep on hand until I need them, is perfect for me.

Trader Joe’s Argentinian Red Shrimp with Trader Joe’s Limone Alfredo Sauce combines two of my favorite Trader Joe’s items. Their Argentinian Shrimp is rich and meaty and, I swear, tastes more like lobster than shrimp. And you can’t beat the price: $9.99 for a package. Plus, they’re already peeled and deveined so you just have to thaw (which takes less than an hour because each shrimp is individually frozen) and you’re ready to go.

The new Limone Alfredo sauce is already a fan favorite and for good reason; it’s a lighter, brighter tasting version of classic Alfredo sauce. I can’t wait to try it on chicken with noodles.

I like to serve this over mixed greens or arugula just to keep things healthy, but this recipe would be delicious, decadent, yumminess over some fettuccine noodles. Feel free to lick your plate.

Trader Joe’s Argentinian Red Shrimp with Trader Joe’s Limone Alfredo Sauce Ingredients

  • 2 Tablespoons Extra Virgin Olive Oil
  • 8 Ounces Pre-Sliced Mushrooms
  • 1 Pint Cherry Tomatoes
  • 1 Tablespoon Minced Garlic
  • 1 Package Trader Joe’s Argentinian Red Shrimp
  • 1 Jar Trader Joe’s Limone Alfredo Sauce

How to Make Trader Joe’s Argentinian Red Shrimp with Trader Joe’s Limone Alfredo Sauce

STEP ONE: Saute mushrooms until they begin to soften.

STEP TWO: Add cherry tomatoes and sauté until softened and skin begins to wrinkle.

STEP THREE: Remove mushrooms and tomatoes from pan. Add the remaining 1 TBL Olive Oil to the pan. Sauté the minced garlic for 1-2 minutes. Add thawed shrimp to heated pan and saute until no longer pink (about 5 minutes)

STEP FOUR: Turn heat down to Medium Low and add tomatoes and mushroom back to the pan.
Add contents of Trader Joe’s Limone Alfredo sauce to pan and stir until the sauce has thinned and is well distributed.

STEP FIVE: Serve over your favorite greens or noodles.

Argentinian Red Shrimp with Limone Alfredo Sauce

This quick and easy dinner recipe uses Trader Joe's Limone Alfredo Sauce to add a bright flavorful punch to sauteed shrimp and vegetables. Serve over your favorite greens for a healthy light dinner or ladle over noodles for the ultimate in comfort food.

Ingredients

  • 2 Tablespoons Extra Virgin Olive Oil
  • 8 Ounces Pre-Sliced Mushrooms
  • 1 Pint Cherry Tomatoes
  • 1 Tablespoon Minced Garlic
  • 1 Package Trader Joe's Argentinian Red Shrimp
  • 1 Jar Trader Joe's Limone Alfredo Sauce

Instructions

  1. Heat 1 TBL Olive Oil on Medium High in a large skillet. Sauté mushrooms until they begin to soften (about 5 minutes.)
  2. Add cherry tomatoes and sauté until softened and skin begins to wrinkle (about 2-3 minutes.)
  3. Remove mushrooms and tomatoes from pan.
  4. Add the remaining 1 TBL Olive Oil to the pan. Sauté the minced garlic for 1-2 minutes.
  5. Add salt and pepper to the shrimp to taste.
  6. Add thawed shrimp to heated pan and saute until no longer pink (about 5 minutes).
  7. Turn heat down to Medium Low and add tomatoes and mushroom back to the pan.
  8. Add contents of Trader Joe's Limone Alfredo sauce to pan and stir until the sauce has thinned and is well distributed.
  9. Serve over your favorite greens or noodles.

Notes

The shrimp needs to be thawed before you cook it. You can speed the thawing process by running cold water over the shrimp for 5 minutes.

Add some crushed red pepper if you would like to add a little heat and flavor to this dish.
