Preparing dinner for two is much different than cooking for the family. It takes some time to get accustomed to it and not have a ton of leftovers. Also, staying healthy is always a priority for us, so I’ve been trying out some new recipes and thought I’d share the best with you.

Gourmet-like dinner on the table in no time! First enjoy a trip to Trader Joe's which is like Disney for foodies and then dress up your store bought gorgonzola gnocchi with fresh herbs and lemon zest. It will taste like you've been cooking all day.
Vegan Gyro - Planted in the Kitchen
Fresh and delicious. Don't skimp on the tzatziki sauce! If you would rather not use falafel and prefer meat options, go for it. The vegetables and sauce go extremely well vegan or non-vegan.
Purple Sweet Potato Gnocchi with Tahini Parsley Sauce
This recipe is with home made gnocchi, but don't let that scare you away. It is an easy recipe and the preparation is much less than one would expect. Absolutely delicious with the Tahini Parsley Sauce. Also, gluten free.

Roasted Chicken and Peaches Recipe ~ Barley & Sage
Marinating the chicken in greek yogurt mixture is the key here. Either 1 hour in advance or leave marinating in fridge overnight. The rest of the recipe goes super fast and leaves you with a full meal all cooked in one pan. Yum.

Oh wow, I never heard of chili oil noodles before trying this. It is absolutely delicious with these asian noodles bursting with color and flavor.
